Chief Curry Stew Chicken with Coconut Dumplings

Ingredients
  

For the Curry Stew Chicken:
  • 15 lbs Chicken, cut into pieces
  • 2 tbsp Chief Brand Curry- Stew Powder
  • 2 tbsp Chief Brand Green Seasoning
  • Cooking oil
  • 1 Onion, chopped
  • 2 Cloves garlic, minced
  • 2 Pimentos
  • 1 Tomato, chopped
  • Coconut Milk (Optional)
  • Chief Pink Himalayan Salt and pepper to taste
  • 1/3 of Cooking Butter
For the Coconut Dumplings:
  • 2 cups Flour
  • 1/2 cup grated coconut
  • 1/2 tsp Salt
  • 1/2 cup Water

Method
 

Prepare the Curry Stew Chicken:
  1. Season the chicken with Chief Curry Stew Seasoning, and Chief Green Seasoning.
  2. Heat oil in a pot,
  3. Add onion, pimentos and garlic, and tomatoes
  4. Mix 2 Tables Spoons of Chief Curry Stew in ½ cup of water, add to pot.
  5. Add the chicken, and brown on all sides.
  6. Add water to cover the chicken, reduce heat, and simmer until the chicken is cooked and the sauce thickens.
  7. * Add Coconut Milk while the sauce is cooking
Prepare the Coconut Dumplings:
  1. Mix flour, grated coconut, and salt in a bowl.
  2. Gradually add water and knead until a dough forms.
  3. Roll the dough into small balls or shapes and drop them into boiling water.
  4. Cook until the dumplings float, then drain.
Serve:
  1. Serve the Curry Stew Chicken hot with Coconut Dumplings on the side.
