Prepare the Curry Stew Chicken:
- Season the chicken with Chief Curry Stew Seasoning, and Chief Green Seasoning.
- Heat oil in a pot,
- Add onion, pimentos and garlic, and tomatoes
- Mix 2 Tables Spoons of Chief Curry Stew in ½ cup of water, add to pot.
- Add the chicken, and brown on all sides.
- Add water to cover the chicken, reduce heat, and simmer until the chicken is cooked and the sauce thickens.
- * Add Coconut Milk while the sauce is cooking
Prepare the Coconut Dumplings:
- Mix flour, grated coconut, and salt in a bowl.
- Gradually add water and knead until a dough forms.
- Roll the dough into small balls or shapes and drop them into boiling water.
- Cook until the dumplings float, then drain.
Serve:
- Serve the Curry Stew Chicken hot with Coconut Dumplings on the side.
