BBQ Chicken (Tandoori-Indian Style) and Chief Fried Rice

Ingredients
  

BBQ Chicken
  • 4 quarters Chicken (legs and thighs)
  • 3 tbsp Tandoori Seasoning
  • 2 tbsp Plain Yogurt
  • 1 tbsp Chief All-Purpose Seasoning
  • 1 tsp Chief Turmeric
  • 1 tsp Chief Paprika
  • 1 tsp Chief Ground Cumin
  • 1 tbsp Lemon Juice
  • 2 tbsp Vegetable Oil
  • Chief Salt and Pepper to taste
Chief Fried Rice
  • 2 cups cooked rice (preferably day-old)
  • 1 cup  mixed vegetables (peas, carrots, corn)
  • 2 eggs lightly beaten
  • 3 tbsp Chief Ginger soy sauce
  • 1 tbsp Chief Fried Rice Seasoning
  • 2 tbsp 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • Chief Salt and Black  pepper to taste
  • Green onions for garnish (optional)

Method
 

BBQ Chicken (Tandoori-Indian Style)
  1. Prepare Marinade: In a bowl, mix Chief Meat Marinade, yogurt, Chief All-Purpose Seasoning, turmeric, paprika, ground cumin, ground coriander, lemon juice, vegetable oil, salt, and pepper.
  2. Marinate Chicken: Coat the chicken quarters with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Grill the Chicken: Preheat your grill to medium heat. Grill the chicken for 25-30 minutes, turning occasionally, until fully cooked and charred on the edges.
  4. Serve: Serve hot with a side of Chief Fried Rice.
Chief Fried Rice
  1. Prepare Ingredients: Heat 1 tbsp of oil in a large pan or wok. Scramble the eggs until cooked, then remove and set aside.
  2. Sauté Vegetables: Add the remaining oil to the pan. Sauté the chopped onion and minced garlic until fragrant. Add the mixed vegetables and cook for a few minutes.
  3. Add Rice and Seasonings: Stir in the cooked rice, soy sauce, Chief Fried Rice Seasoning, salt, and pepper. Mix well, ensuring the rice is evenly coated with the seasonings.
  4. Finish and Serve: Stir in the scrambled eggs. Garnish with chopped green onions if desired. Serve hot alongside BBQ Chicken.
