Place coffee in coffee percolator, add one cup of hot water and perk to a strong brew or dissolve Chief Brand Premium Coffee in hot water, let cool and drain. You will need 1/4 cup of strong coffee. Mix the milk with the coffee essence. Dissolve Chief Brand Custard Powder with 2 tsp milk and 2 tbsp sugar, mix to a smooth paste.
Bring the balance of the milk to a gentle boil and pour into custard paste, stir well to combine
Return custard mixture to pot. Heat the custard mixture slowly over a gentle heat just until the mixture thickens enough to coat the back of a wooden spoon.
Pour the custard into a bowl and cool. Gently stir the coffee mixture into the cooled custard. Meanwhile whip the cream lightly and fold it carefully and thoroughly into the cooled custard/coffee mixture.
Refrigerate until thoroughly chilled. If you are using an electric ice-cream mixer, prepare the ice cream according to manufacturers' directions.
