Chief Brand Aloo Pies

Ingredients
  

Dough

  • 2 cups All Purpose Flour
  • 2 tsp Chief Brand Baking Powder
  • 1/2 tsp Chief Brand Salt
  • 2 tbsp Butter or Shortening

Filling

  • 1 lb Potatoes peeled and cut into quarters
  • 1 small Onion finely chopped
  • 1/4 cup Chives finely chopped
  • 1 tsp Chief Brand Garlic Powder
  • 1 Pimento Pepper seeded and chopped
  • 1/2 Scotch Bonnet Pepper seeded and chopped; optional
  • 2 tsp Chief Brand Ground Roasted Geera
  • 1/2 tsp Chief Brand Ground Black Pepper & Chief Brand Salt
  • Vegetable Oil for frying

Instructions
 

  • Make the dough by combining flour, with baking powder, salt and butter. Add water to make a soft but pliable and non stick dough.
  • Knead into a ball and let rest. Meanwhile boil potatoes with a little salt until tender, when cooked drain and crush well with potato masher.
  • Add Chief Brand Garlic, Geera, peppers, onion, chive, Salt and Ground Black Pepper.
  • Taste and adjust seasoning. Divide dough into 8 pieces, and roll each piece into a ball. Rest for 5 minutes.
  • Roll each piece of dough into a 5 inch circle, place about 1-2 tablespoons onto the lower portion of the circle, and bring the upper portion over lower portion to cover in a half moon shape. Seal and continue until all the dough and filling is used up.
  • Heat oil in a frying pan and shallow fry pies until golden brown. Drain and fill with chutney
  • Pairs well with Chief Brand Tamarind Chutney or Chief Brand Kutchela.
