Chief Brand Aloo Pies

Ingredients
  

Dough
  • 2 cups All Purpose Flour
  • 2 tsp Chief Brand Baking Powder
  • 1/2 tsp Chief Brand Salt
  • 2 tbsp Butter or Shortening
Filling
  • 1 lb Potatoes peeled and cut into quarters
  • 1 small Onion finely chopped
  • 1/4 cup Chives finely chopped
  • 1 tsp Chief Brand Garlic Powder
  • 1 Pimento Pepper seeded and chopped
  • 1/2 Scotch Bonnet Pepper seeded and chopped; optional
  • 2 tsp Chief Brand Ground Roasted Geera
  • 1/2 tsp Chief Brand Ground Black Pepper & Chief Brand Salt
  • Vegetable Oil for frying

Method
 

  1. Make the dough by combining flour, with baking powder, salt and butter. Add water to make a soft but pliable and non stick dough.
  2. Knead into a ball and let rest. Meanwhile boil potatoes with a little salt until tender, when cooked drain and crush well with potato masher.
  3. Add Chief Brand Garlic, Geera, peppers, onion, chive, Salt and Ground Black Pepper.
  4. Taste and adjust seasoning. Divide dough into 8 pieces, and roll each piece into a ball. Rest for 5 minutes.
  5. Roll each piece of dough into a 5 inch circle, place about 1-2 tablespoons onto the lower portion of the circle, and bring the upper portion over lower portion to cover in a half moon shape. Seal and continue until all the dough and filling is used up.
  6. Heat oil in a frying pan and shallow fry pies until golden brown. Drain and fill with chutney
  7. Pairs well with Chief Brand Tamarind Chutney or Chief Brand Kutchela.
