  • 1/4 cup Water + 2 tsps

For Sauce

  • 1/4 cup Unsalted Butter
  • 5 cloves Garlic finely minced
  • 3 tbsp Brown Sugar
  • 2 tsp Chief All Spice Soy Sauce
  • 2 tbsp Honey
  • 1 tbsp Chief Tamarind Chutney
  • 1 tbsp Chief Shadon Beni Chutney
  • 2 tbsp Water
  • 1 tsp Chief Chili Flakes

Instructions

  • Season wings with spices and Green Seasoning and let sit to marinate for 1 hour.
  • Meanwhile, make the batter by mixing the rice flour, cornstarch, and water and whisking until combined. Set aside.
  • Preheat oil to 350 Degrees Fahrenheit. Dip seasoned wings into the batter, and place in hot oil to deep fry 5 or 6 pieces at a time.
  • Do not over-crowd the hot oil when frying. Let fry for 5 to 6 minutes then remove and place on napkins to drain.
  • Make the sauce by placing the saucepan over medium to high heat and adding in the butter followed by the minced garlic.
  • Let sweat for 1 minute then add in the rest of the ingredients and bring to a simmer. After 2 – 3 minutes, the sauce should slightly thicken and come together.
  • Remove from heat and place in the fried wings and toss in the sauce. Serve and enjoy!
