Preheat the oven to 400°Farenehit
Place chicken on ckean surface and season with the salt and pepper.
Combine the Biryani Seasoning with the yogurt, sugar, lemon juice, garlic, ginger and mix well.
Loosen the skin over the chicken breast then rub the marinade over the chicken, under the skin and into the cavities of the bird properly.
Place the chicken into a roasting dish.
Place into the oven and allow to roast for 20 minutes at 400°F then turn the heat down to 350°F and allow to roast for another 30-40 minutes until the chicken is cooked through.
Remove the roast chicken from the oven and allow to rest for 10 minutes before carving and serving.
