Method
To make pumpkin puree
- Preheat oven to 350 degrees Fahrenheit
- Cut pumpkin into halves.
- Remove the seeds with a spoon
- Put them faced down on a lined baking tray
- Roast in the oven for about 45mins
- Scoop out the flesh. Let cool and store in fridge or freezer
For the smoothie
- Put everything in a blender or Nutri-bullet
- Blend for about 35-seconds until you reach a creamy and thick smoothie
- Garnish with whipped cream and crushed pumpkin seeds.
