Prep
- Sprinkle and rub salt on chicken all over including crevices and cavity
- Sprinkle and rub black pepper on chicken all over including crevices and cavity
- Rub Hakka seasoning liberally on outside of chicken and sprinkle inside cavity.
- Tuck wings and drumsticks
Cooking
- Set up spit over coals
- Insert spit rod into chicken
- Place over coals and turn about every 3-5 minutes
Notes
You can use spit if you have one but can use oven as well for just as tasty results. Roast chicken at 400 degrees Fahrenheit for 20 minutes, then bring down to 300 degrees for an additional 35 minutes.
You can also use beef, fish or lamb leg.
