You will need:
1lb ochro
2 onions
2 cloves garlic
1” root ginger
Oil for frying
2 tomatoes quartered
1 tbsp. CHIEF curry powder
2 ozs tamarind soaked for 30min in 8tbsp boiling water
1 ½ oz. creamed coconut
Salt to taste



1. Remove top and tail of ochroes, wash and cut in halves
2. Finely mince onions separately , then mince garlic and ginger
3. Heat some oil in a saucepan and fry onion till brown. Add garlic and ginger and fry for another 3 minutes.
4. Add CHIEF curry powder and fry well
5. Add tamarind water, coconut, bring to a boil, lower heat and simmer for 30 minutes
6. Add ochroes and tomatoes, season with salt and cook for 5-10minutes
